WHAT
La Vinificación
Las uvas se cosechan a mano en septiembre de parajes seleccionados y se dejan enfriar para preservar los brillantes aromas que esta región aporta a los vinos. Luego se fermentan con un 50% de racimos enteros para preservar el perfil de fruta fresca y al mismo tiempo conservar la profundidad y persistencia de las vides viejas y el terroir circundante. Taninos suaves y flexibles que se consiguen mediante una manipulación mínima durante toda la fermentación.
